With 18 years of culinary experience gleaned in some of the best restaurants and hotels in London and India, and specialising in tandoori cooking, Executive Chef at The LaLiT London, Santosh Shah brings impeccable modern Indian dining to the table. Pairing the best of international culinary concepts with the complex and innovative flavours of India, each dish he creates is rich with history and authenticity.
Previously Head Chef of London’s Cinnamon Kitchen, Santosh Shah took on the role of Executive Chef at luxury boutique hotel, The LaLiT London in 2018. Santosh Shah is responsible for all food and beverage in the hotel including award-winning pan-Indian dining destination Baluchi, The Gallery, The Headmaster’s and Teacher’s Room bars and The Terrace as well as private events and room service. Within Baluchi, Santosh is also responsible for the Naan’ery, a dedicated space serving traditional Indian breads alongside perfectly paired wines. The bar-style seating of the Naan’ery allows guests to observe as Santosh showcases his talent for making traditional Indian bread in an iron tandoor oven.
Recent awards for Baluchi include the Conde Nast Johansens 2019 ‘Best Dining Experience’ as well as winning ‘Best in London City and Suburbs’ at the British Curry Awards, 2018.
