Kate from Eat and Mess will be joined by successful food scientist Helen Conn to debunk some of the usual myths surrounding sugar-free replacements and offer some more nutritionally sound substitutes.
Kate will be working on three recipes to demonstrate how to replace sugar, lower fat and calorie count, while producing technically perfect goods that also look and taste great.
Helen will bust some of the usual myths surrounding sugar-free and fruit sugars that are often used as replacements, and offer up some more nutritionally sound substitutes (which will be also used throughout demo).
Demonstration of three items:

• Coconut lime sponge cake with frosting and decoration
• Seasonal fruit and almond tart with glaze and decoration
